DYI Bran Muffins

Do It Yourself Bran Muffins

One of my customers, Sue, called me the other day. She needed soap and wanted to stop by. I told her I’d be home all day because it was a cooking day. I try once a week to cook as many things as I can and freeze meals for days when I’m busy. When Sue stopped by I had just taken bran muffins out of the oven so I sent her home with soap and muffins. Sue called me later that day for the recipe, I had told her it was on the back of the Kellogg’s All Bran cereal box but it seems I had an older box and the recipe is no longer there. Since Sue and I both enjoyed the muffins, I thought I’d share it with you. I did make a few changes. I used buttermilk instead of regular milk and I cut back a little on the sugar.

1 1/3 cups flour

1/3 cup sugar

1 tablespoon baking powder

1/4 teaspoon salt

2 cups Kellogg’s All-Bran Original cereal

1 1/4 cups buttermilk

1/4 vegetable oil

Preheat oven to 400 and spray 12 muffin cups with cooking spray.

Mix the flour, sugar, baking powder and salt and set aside.

Combine the buttermilk and cereal in a bowl and wait 2 minutes for the cereal to get soggy

Add the egg and vegetable oil to the milk and cereal. Mix well.

Add the flour mixture, stirring only until combined.

Portion evenly into 12 muffin cups.

Bake at 400 for 20 minutes.
